Ingredients

Serves : 6
  • Big Karela (Bitter Gourd) 1/2Kg


  • Urad Dal 2 tablespoon


  • Chana Dal 4 tablespoon


  • Roasted Groundnut 2 tablespoon


  • White sesame seeds 2 tablespoon


  • Coconut 1/2 scraped


  • Red Chilli 6


  • Garam masala 1 teaspoon


  • Chaat Masala 1 teaspoon


  • Lemon 1 (squeeze juice)


  • Oil 1/4 litre to fry Karela

Directions

  • Cut Karela to bite size pieces. Remove seeds
  • Do not peel or put salt and squeeze out its juice. This recipe will be tasty with the ingredients and we will reduce bitterness in last step
  • Deep Fry Karela in oil and keep it aside.
  • Other options are bake in oven for 30 minutes or till it turns brown. You can air fry also. If you want less oil
  • Dry roast urad and chana dal in medium flame till turns red. Add scraped coconut and roast till coconut is roasted
  • Roast below separately and keep separate as each will have different texture. If we put and roast and grind together we will not have a good nutty powder
  • Dry roast sesame seeds. Little oil roast red chilli
  • In a mixer put roasted chana urad coconut along with red chilli and groundnut
  • Dry grind to coarse powder. Finally add sesame seeds and run the mixer for just 10 second. Running more time will make the powder.oily from sesame oil from sesame seeds
  • Take out the powder add turmeric chaat and garam masala powders. Add needed salt to the powder
  • Mix this powder to roasted Karela to coat it fully. It will stick as Karela has oil in it.
  • Alternative you can prepare this powder before and fry karela and add this powder to it when its hot.
  • Add lemon juice and give it a stir. This will reduce the bitterness and it will make it even tasty.
  • Serve with curd rice.
